Taters

Looking for a quick fix for dinner? I usually am, too. A great thing to have for a fast meal is a baked potato. Obvious - you just pop one in the microwave, right? Au contraire. I don't like microwaved potatoes because they are really more steamed than baked, and the big ones never seem to get done in the middle. So, what I do is take a big Russet potato, clean it under running water, cut it in half and bake it for about an hour at 450 degrees. The trick is to do this the day before and then leave the ready-baked potatoes on a plate or whatever so they're waiting for you after a long day of work the NEXT day. Aaron thought it was slightly gross to just leave them out overnight on top of the stove, so you can throw them in the refrigerator in a Tupperware, if you want.

Then, the next day when you get home from work and you're so hungry you want to gnaw your own arm off, all you do is take however many pre-baked potato halves you want, slap them on a plate, break them open, add some cheese and put the whole thing in the microwave for a minute or two. Then take the plate out, add some sour cream (or salsa, fresh cracked pepper or whatever blows your skirt up) and voila.

Sometimes, I add a salad on the side

and maybe some soup, if I'm really hungry.
